Last night for our weekly Happy Hour, the girls and I decided to do Mojitos...yum! They were pretty good-we made them sweeter than I've ever had them but they were delish. I don't like to taste liquor so the sweet worked out great.
For food we had wings, taquitos, avocado dip, and spinach and artichoke dip. I made the spinach and artichoke dip-it was soo good. Great for entertaining. Here is the recipe I used:
1 can of Artichoke hearts
8 oz cream cheese
1/2 can spinach
garlic powder to taste
salt & pepper to taste
5-6 green onions
Heat oven to 400 degrees. Cut up the artichoke hearts and green onions. Mix it all up in a bowl. Transfer mixture from bowl to baking dish. Stick in the oven for about 15-20 minutes. Serve with toasted pita chips (break up pita bread, brush with a little bit of olive oil, sprinkle on some salt and stick in the oven until desired crispiness is reached).
Very easy and very good!
